Filipino Inspired, Ube Burger

I went to a Filipino food fest in NYC called Ubeland, and it was absolutely packed. I was fortunate enough to get ube rolls, an ube cheesecake, and an ube croffle, but I missed out on the hyped ube burger. It’s a bright purple burger bun, that I had to make myself.

Ube has been large in the Western food culture recently, and for background, it’s a purple yam native to the Philippines, often used in ube halaya. It’s like a sweet potato, but nuttier, smoother, a bit floral. Its bright purple tone makes it good on socials, but now everyone’s making it their personality. So, here’s the burger recipe:

Ingredients

Ube Bun (Makes 4):

  • 2/3c of water
  • 1 instant yeast packet
  • 4 tsp, sugar
  • 1 tsp, salt
  • 1 egg, divided into 1/3 and 2/3s (for egg wash)
  • 4 tsp, olive oil
  • 2c of flour, plus more for kneading
  • 1 tsp, ube extract

Ube Burger

  • 1/3 lb, ground beef, per patty
  • Salt, pepper, garlic powder
  • 3 pickles
  • 2 slices of American cheese
Directions
  • Ube Bun
    1. Warm the water until just warm to the touch (about 105 to 110°F).
    2. In a bowl, mix the warm water, yeast, and sugar. Let sit for 5 to 10 minutes until foamy.
    3. Add salt, olive oil, 1/3 of the egg, and ube extract. Stir to combine.
    4. Gradually add flour, mixing until a shaggy dough forms.
    5. Transfer to a floured surface and knead for 8 to 10 minutes, adding flour as needed, until smooth and elastic.
    6. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
    7. Punch down the dough and divide into 4 equal portions. Shape into smooth buns.
    8. Place buns on a parchment-lined baking sheet, cover loosely, and rest for 30 to 45 minutes.
    9. Preheat oven to 375°F.
    10. Brush buns with the remaining 2/3 egg for egg wash.
    11. Bake for 15 to 18 minutes, until lightly golden and cooked through.
    12. Cool completely before slicing.
    Ube Burger
    1. Form ground beef into patties (about 1/3 lb each), slightly wider than the buns.
    2. Season both sides generously with salt, pepper, and garlic powder.
    3. Heat a skillet or grill over medium-high heat.
    4. Cook patties for 3 to 4 minutes per side, until desired doneness.
    5. Add American cheese during the final minute and cover to melt.
    6. Lightly toast the cut sides of the ube buns if desired.
    7. Assemble burgers with pickles and cheesy patties on the ube buns.
    8. Serve immediately while hot.
